You guys – I am SO excited about today’s post!
While I use my share of “shortcut” foods and ingredients (hello, canned biscuits!), one item I gave up long ago was microwave popcorn. Once I learned about the unhealthy ingredients added to the popcorn – not to mention those horrible, chemical- and plastic-coated bags – I walked away and never looked back.
And it’s been pretty easy, for the most part. I learned this neat trick for making air-popped popcorn, and it’s been perfect for a quick snack, and in so many recipes. But I’ll admit I did miss those bags when I wanted something more flavorful than “just plain”.
Quinn is a small company with a big mission – cleaning up snacks. Oh hey – and Quinn popcorn is also DELICIOUS. The ingredient pouches are added after popping the kernels – so the oils and/or butter are never microwaved. This means popcorn that’s fresh and flavorful, and a snack that I can feel completely great about giving to my family.
And putting in recipes, of course!
It’s no secret that I’m a fan of peanut butter. And marshmallows. So Fluffernutter popcorn bars seemed like a perfect treat to highlight Quinn popcorn!
This 4-ingredient snack comes together quickly and easily, and hits all the sweet-salty notes that you know I love. Top with some peanut butter chips if you like (I did!), or a handful of mini marshmallows (I will next time!).
Grease a 9″ x 13″ baking pan, a large bowl, a wooden spoon and a metal spatula. Pour the popped corn into the bowl.
Melt the butter and peanut butter in a large saucepan over medium-low heat, stirring constantly. Add the marshmallows and continue stirring till melted and well combined. Pour into the bowl of popcorn and stir quickly to coat. Immediately transfer into your prepared pan and use your metal spatula to press in evenly. Top with peanut butter chips (if using) and press in gently. Let set and cut into bars.
