snack it to me: fluffernutter popcorn bars

You guys – I am SO excited about today’s post!

While I use my share of “shortcut” foods and ingredients (hello, canned biscuits!), one item I gave up long ago was microwave popcorn. Once I learned about the unhealthy ingredients added to the popcorn – not to mention those horrible, chemical- and plastic-coated bags – I walked away and never looked back.

And it’s been pretty easy, for the most part. I learned this neat trick for making air-popped popcorn, and it’s been perfect for a quick snack, and in so many recipes. But I’ll admit I did miss those bags when I wanted something more flavorful than “just plain”.

Enter Quinn.

Quinn is a small company with a big mission – cleaning up snacks. Quinn’s founder, Kristy, wanted to clean up her favorite childhood snacks for her own children, and worked tirelessly to create a better-for-you microwave popcorn. Quinn uses only non-GMO popcorn and 100% real ingredients, along with a unique “PurePop” bag that is both chemical- and plastic-free (in addition to being recyclable AND compostable).

In addition, Quinn believes in something really unique in the snack world: “farm-to-bag” transparency – the idea that sharing where every ingredient comes from means that you make the food differently, and make it better. It also means putting the spotlight on the farmers they partner with – how often have you come across that in the snack aisle?

Oh hey – and Quinn popcorn is also DELICIOUS. The ingredient pouches are added after popping the kernels – so the oils and/or butter are never microwaved. This means popcorn that’s fresh and flavorful, and a snack that I can feel completely great about giving to my family.

And putting in recipes, of course!

It’s no secret that I’m a fan of peanut butter. And marshmallows. So Fluffernutter popcorn bars seemed like a perfect treat to highlight Quinn popcorn!

This 4-ingredient snack comes together quickly and easily, and hits all the sweet-salty notes that you know I love. Top with some peanut butter chips if you like (I did!), or a handful of mini marshmallows (I will next time!).

4 tablespoons butter
1/2 cup creamy peanut butter
(1) 10-ounce bag marshmallows
1/2 cup peanut butter chips (optional)

Grease a 9″ x 13″ baking pan, a large bowl, a wooden spoon and a metal spatula. Pour the popped corn into the bowl.

Melt the butter and peanut butter in a large saucepan over medium-low heat, stirring constantly. Add the marshmallows and continue stirring till melted and well combined. Pour into the bowl of popcorn and stir quickly to coat. Immediately transfer into your prepared pan and use your metal spatula to press in evenly.
