I’m pretty sure that there is not a person in my life who has not been a recipient of this cake – either in my home or delivered to theirs – since I first tried it myself, over 20 years ago..
I had just brought Conor home and was exhausted and overwhelmed. My friend Mia invited me over to her house, took Conor out of my arms and put a slice of this cake in front of me. And it was the best thing ever. Both the afternoon AND the cake (and Mia too, TBH).
I don’t know how something so simple could be so delicious and satisfying – and I will probably always be somewhat biased and emotional about it – but anyone I’ve ever served it to has had the same reaction.
I’ve made this cake more than any other treat. More than these cookies. More than this cake. And I ALWAYS make two (it’s seriously that easy). It’s what I make for bake sales, back-to-school nights, impromptu get-togethers, housewarmings, and of course new moms.
What’s your “most made” treat?
1 1/2 cups sugar, divided
1 teaspoon cinnamon
1 stick (8 tablespoons) unsalted butter, room temperature
1 teaspoon vanilla
1 cup (8 ounces) sour cream
2 cups flour
1 1/2 teaspoons baking powder
1 teaspoon baking soda
1/4 teaspoon salt
Pre-heat oven to 350 degrees; grease and flour an 8″ x 8″ pan. Place 1/2 cup sugar and the cinnamon in a small bowl and stir to combine.
Beat the butter and remaining 1 cup sugar till light and fluffy – add the eggs and beat again, followed by the vanilla and sour cream. Add the flour, baking powder, baking soda and salt and beat till combined.
Pour 1/2 the batter into your pan – smooth with an angled spatula and top with half the cinnamon-sugar. Repeat. Bake for 40 minutes or till a tester tests clean. Cool in pan on a wire rack for 10 minutes, then remove from pan to cool completely.
