Spring is about to be “sprung”, and with it the onset of so many celebrations – Mother’s and Father’s Days, graduations, confirmations and more. And I find that it’s super handy to have some “back pocket” treats that are low on prep/fuss but high on impact and flavor. Not having to pull out AllThePotsAndPans, just to create some fun, crowd-pleasing snacks is welcome any time of year – but especially springtime.

And the key to most of these treats is the use of “shortcuts”.

If you’ve been visiting me here for some time you know what a fan I am of shortcut ingredients. These are pre-made or packaged ingredients that, when used creatively, save a ton of time and effort in the kitchen while yielding some pretty delicious results!

I was excited to create an easy spring snack using Kaukauna® Cheese Spread Cups. Made with 100% real cheddar, Kaukauna® is as delicious on its own as it is when incorporated into a recipe – and I knew it would be perfect in this one!

For my “shortcut” ingredient I went with refrigerated pizza dough – such a lifesaver to have on-hand, easy to work with and no kneading required!

And I decided to finish these little bites off with my favorite topping – “everything” spice. You can find it on-line and in most supermarkets these days, but it’s so easy to make that I included my favorite version.

I headed to ShopRite to get my ingredients:

“Everything” Pretzel Bites

2 teaspoons each poppy seeds, sesame seeds, dried garlic, dried onion
1 teaspoon kosher salt
2 6.5-ounce Kaukauna® Cheese Spread Cups, Sharp Cheddar
1 tube refrigerated pizza dough (or 14-16 ounces of homemade or other storebought pizza dough)
1 egg, beaten
1/3 cup baking soda

Pre-heat oven to 400 degrees; line 2 baking sheets with parchment paper.

Make the everything spice: combine the spices and kosher salt in a small bowl; set aside.

Scoop 24 small portions (about 1-2 teaspoons) of Kaukauna® cheese spread onto one of your prepared baking sheets. Freeze for 15 minutes.

Bring 2 quarts of water to a boil in a large pot. While the water is heating up, unroll the pizza dough onto a cutting board and pat gently to smooth. Cut into 24 squares.

Place one of the cheese balls onto each of the dough squares, bring up the corners to meet in the middle and pinch tightly to seal. Return to the baking sheet and keep chilled till water comes to a boil.

When water boils add the baking soda and 8 of the dough balls. Cook for one minute and use a slotted spoon to return to your baking sheet. Repeat with remaining balls, dividing them evenly between your 2 sheet so they are spaced evenly apart.

Brush the tops of each ball with some of the egg and sprinkle with some of the everything spice. Bake for 12-16 minutes, or till deep golden brown. Serve warm.

    My stepmom used to buy this kind of cheese in a tub and we all made fun of her- but it never occurred to me to make use of it in a recipe. Well done!
