It’s cookie season!

As you long-time readers know, I post a cookie recipe here each month – because I heart cookies the most. And you also know that I give cookies as gifts around the holidays (click here and here to see how I pack ’em up for giving!).

And while I have my trieds and trues – cookies that I make and give without fail every year (Fay’s butter and chocolate espresso are always on the list) – I always like to try something new.

And this orange pomegranate shortbread is this year’s model!

You know what a fan I am of shortbread – ESPECIALLY at this time of year. The dough comes together in minutes, and the unbaked logs freeze beautifully – you’ll never go back to slice-and-bake again!

And there are endless mix-ins that work so well with the base recipe. I love how festive and colorful the orange zest and pomegranate seeds are, and the pink-tinted glaze adds just the right finishing touch.

    hey there … can i sub potato starch for the corn starch??? we have a corn allergy here

      Hmm – I don’t know- I might just eliminate altogether and increase the flour – I’m not sure how the potato starch acts with the other ingredients when baked!
