pop! goes my summer: “sumbitches” pops

Okay, so I never watched “How I Met Your Mother” – you? I love NPH (who doesn’t?), but this show just somehow passed me by. That said, while looking for popsicle inspiration recently, I came across a recipe for “Sumbitches” popsicles – and a reference to HIMYM. I was intrigued, to say the least.

A chocolate, peanut butter and caramel cookie? I may need to revisit this sometime in the future. But for now, I was smitten with the combination of these flavors in a popsicle. And Abby, of the lovely blog Lace and Lilacs, deserves major props for the inspired recipe.

Feel free to make the layers in any order or size that you like. I went with thinner layers to ensure getting at least 2 flavors in each bite.

What foods do you associate with certain shows? I look to the cookie……

“Sumbitches” Popsicles
adapted from Lace and Lilacs

Chocolate Layer
1/2 cup sugar
2 tablespoons flour
2 tablespoons unsweetened cocoa powder
2 cups milk

Place ingredients in a small saucepan, set over medium heat and whisk till incorporated. Bring to a boil, pour through a sieve into a measuring cup, and let cool.

Peanut Butter Layer
1 cup milk
2 tablespoons honey
1/2 cup peanut butter

Place ingredients in a blender – blend till smooth.

Caramel Layer
1 cup heavy cream
3 tablespoons caramel sauce (storebought or homemade)
pinch of kosher salt

Place ingredients in a heatproof bowl or measuring cup – microwave for 30 seconds. Whisk till ingredients are incorporated.

To make the popsicles, place a bit of the chocolate mixture into the bottoms of your molds. Freeze till solid. Top with the peanut butter mixture, insert your popsicle sticks and freeze. Add the caramel mixture and freeze again. Repeat layering till molds are filled and freeze overnight (any leftover mixtures can be layered in paper cups, if desired). To release the pops, hold molds briefly under hot water.
