d.i.y.: grapefruit-pomegranate gummies

As someone who can pretty much be relied upon to have a bag or two of gummies in her car/purse/pantry at all times, you’d think I would have attempted to make my own.

Nope.

Till now.

And if you happened to see the recent cover of Bon Appetit, you’d know why I was so inspired.

These gummies were too beautiful – and, turns out, too easy – NOT to try. And I’m so glad that I did!

These are nothing like their storebought cousins. The flavors are truer, the texture softer and they are far less cloyingly sweet. I think these would be smashing served at a New Year’s Eve party, but truly they are easy enough to whip up for the candy-lover in your life.

Grapefruit-Pomegranate Gummies
adapted from Bon Appetit

Grapefruit Layer
3/4 cup fresh grapefruit juice
1/3 cup honey
1 tablespoon fresh lemon juice
2 tablespoons unflavored powdered gelatin

Pomegranate Layer
1/2 cup pomegranate juice
1/4 cup honey
2 tablespoons fresh lemon juice
2 tablespoons unflavored powdered gelatin

Make the grapefruit layer: Combine the grapefruit juice, honey and lemon juice in a small saucepan. Sprinkle the gelatin over the top and let sit for 15 minutes. Cook, stirring constantly over medium-low heat, till the gelatin is dissolved and the mixture is translucent (do not boil). Strain into an 8″ x 4″ loaf pan and chill till firm – about 40 minutes.

Make the pomegranate layer: Wipe out the saucepan, and in it combine the pomegranate juice, honey and lemon juice. Sprinkle the gelatin over the top and let sit for 15 minutes. Cook, stirring constantly over medium-low heat, till the gelatin is dissolved and the mixture is translucent (do not boil). Strain over the grapefruit layer, cover with plastic wrap and chill for at least 3 hours (or up to 4 days).

Run a thin knife or angled spatula around the sides of the pan and gently lift the candy out onto a cutting board. Cut into cubes with a sharp knife, or use small cookie or canape cutters to create various shapes. Keep chilled till serving.
