So here we are again – back to school! And, like every year, I am faced with the challenge of finding quick, easy and nutritious snacks for my guys. And in a perfect world those snacks could be happily served up on a hectic morning, after school or even (dare I say it?) for dessert.
Meet perfect world:
I was pretty excited to take on the challenge of creating a healthy snack using NESTLÉ® NESQUIK® Chocolate. Noah loves both his chocolate and NESTLÉ® NESQUIK® Powder Strawberry milk, and I love that – in addition to no artificial colors or flavors – Nesquik contains 7 important vitamins and minerals.
I knew immediately that I wanted to make a pop (tis the season and all….) to serve as a healthy and delicious morning snack. I also committed to making the recipe vegan, as well as gluten- and peanut-free – so that anyone could enjoy, regardless of dietary restrictions and/or allergies.
I really loved the 1-ingredient banana ice cream pops I created a year ago, so I started with that as a base. This insured a healthy start that was also dairy-free (for my vegan “kid”). Almond butter and Nesquik chocolate came next, and finally (since I love a good “crunch”), layers of granola.

I headed to Target (because, you know, it was a day with “y” in it) and gathered all my ingredients. I had already decided to make these pops in muffin tins, so while I was there I also picked out some washi tape to decorate the sticks to match the liners (because, you know, weekday mornings can be festive too!).

These pops came together in just a few minutes and were declared a huge hit by all. Try them yourself – you won’t believe you are serving up something that is so delicious AND healthy too.
What are your favorite “fast snacks” to serve up during the school year?
4 bananas, sliced and frozen
1/2 cup almond butter (or any nut butter)
1/4 cup NESTLÉ® NESQUIK® Chocolate
2 cups granola (gluten-free if preferred)
Line a 12-cup muffin tin with liners; set aside along with 12 popsicle sticks.
Place frozen banana slices in your food processor and blend till crumbly. Scrape down the sides. Blend again till mushy; scrape down the sides. Blend again till smooth, with small bits of banana remaining – scrape down the sides. Add the almond butter and Nesquik and blend one more time, till it smooths out completely and looks like ice cream.
Place a spoonful of ice cream into each of your 12 muffin liners. Top with a layer of granola. Repeat layering until liners are full. Freeze for an hour and insert popsicle sticks. Freeze overnight and keep frozen and covered till ready to serve.
