2-ingredient cherry cola slushie floats!

After a long winter we basically live outside come summertime, with weekends at the beach or exploring the city, and dinner outside every night.

We also eat ALL the ice cream, and I’m always looking for different ways to serve it up. Not that there’s anything wrong with a big bowl and a shower of sprinkles, but sometimes it’s nice to jazz things up, right?

And this being summer, things should also be easy. I’ve sandwiched ice cream between two cookies. I’ve layered it with cookie crumbs, whipped cream and homemade fudge sauce. And don’t get me started on the popsicles!

But my favorite – and easiest – way to dress up a container of ice cream is this:

Yes, you are seriously only two ingredients (and one of them is ice cream!) away from this fun and festive summertime dessert, and it could not be easier to make!

When asked to create a simple ice cream float I took inspiration from the top of any proper float – the cherry – and headed to my local Target for provisions.

2-Ingredient Cherry Cola Slushie Floats

8 cups Dr Pepper® Cherry, divided
Archer Farms Amaretto Cherry Gelato

Maraschino cherries, for garnish

Make the slushie: pour four cups of the soda in a baking pan. Freeze for one hour and break up any frozen chunks with a fork, stirring to incorporate. Freeze for another hour and break up any frozen chunks with a fork, stirring to incorporate. Freeze overnight.

Make the syrup: pour the remaining four cups of soda into a saucepan and bring to a boil. Boil till soda is reduced to about ½ cup; remove from heat and cool.

Remove frozen slushie from the freezer and use a fork to scrape down the mixture into flakes (you can break up any large chunks at the bottom with a whisk). Store covered, in the freezer, till ready to serve.

To assemble: spoon alternating layers of slushie and gelato in tall glasses – top with a cherry and serve immediately.
