balls, bites & bars: three-ingredient energy bars

So this will be my last “BB&B” post of the series…..

Though it’s been fun for me (and I hope for you too!), I believe it has run its course. There are only so many variations on the nut/fruit/seed combo that I could uncover, and I was risking getting redundant here.

And that’s what I love so much about this blog – that I can try out new things, see where they go, and bid adieu when their time is up.

I was hoping to have a great “final” recipe for you, to wrap things up, and I am grateful to The Kitchn for this find:

If you were to break down most (if not all) “energy bar” recipes, you’d probably find a variation on the following three ingredients: nuts, dried fruit and dates. So what the folks at The Kitchn did was to create a template for using any variety of said ingredients (plus your choice of mix-ins, if desired) to make your own!

And it couldn’t be easier – simply combine one cup each of any nut, dried fruit and whole, pitted dates (12-15 make a cup) in your food processor. Pulse till  everything is broken down and then blend till it starts to clump together (about a minute). Scrape down the bowl and blend again until the mixture forms a ball (1-2 minutes more).

Using slightly damp hands,  press into a parchment-lined 8 x 8 pan and chill overnight. Cut into bars or squares (alternatively, you can shape the mixture into balls and refrigerate till firm). Store covered, in fridge for a few weeks.

I used my favorite combination of cherries and pistachios but clearly the sky’s the limit. As for the mix-ins, same (I might toss in some cacao nibs next time).

Cherry-Pistachio Energy Bars
from The Kitchn

1 cup shelled pistachios
1 cup dried cherries
1 cup whole, pitted dates (12-15)

Using slightly damp hands,  press into a parchment-lined 8 x 8 pan and chill overnight (this will create rather thin bars. For thicker bars, use a 9 x 5 or 8 x 4 loaf pan).

Cut into bars or squares (alternatively, you can shape the mixture into balls and refrigerate till firm). Store covered, in fridge for a few weeks.

    This recipe looks exactly like what I’ve been looking for! I’m new to this though and I was wondering if anyone has calculated the fat, calories, sugars or carbs, etc or can anyone recommend a formula for doing so?

      So glad you like this! I get asked often for nutritional info – unfortunately I don’t include that information. Given that there are only 3 ingredients it probably wouldn’t take long to do a search for each and then divide it by the number of bars you make? I hope that helps! 🙂
