In thinking about this month’s recipe, I wanted to see if I could get the ingredient list whittled down a bit – while still maintaining the goal of being raw/vegan/white-flour-free.

And these little bites from Rootiful filled the bill perfectly.

If you find some of these recipes to be a tad too sweet, you will love these. The almond butter is what comes through flavor-wise, combining with the shredded coconut for a healthy, filling on-the-go treat!

Coconut-Almond Butter Energy Bites
adapted from Rootiful

1 1/2 cups oats
1/4 cup ground flax seed
6 pitted dates
1/4 cup nut butter (I used almond butter)
1/4 cup maple syrup

1/2 cup unsweetened shredded coconut

Place the oats in your food processor and process till finely ground. Add the flax, dates and 1/4 cup water – blend till fully incorporated. Add the almond butter and maple syrup;  process till smooth.

With slightly damp hands, make tablespoon-sized balls (I love this tool) and roll in the shredded coconut. Place on a lined baking sheet and refrigerate till firm.

To store, keep bites in an airtight container in the fridge.
