My last “pop” post for the season.
Welp.
So I thought it would be fun to re-visit my very first popsicle – which also happened to be my very first post!
Welp.
For this version of hot cocoa popsicles I used cocoa powder instead of chopped chocolate, and added layers of mini chocolate chips and mini marshmallows.
They disappeared almost immediately.
I’ve had so much fun with this series; I hope you’ve enjoyed it too!
Which pop was your favorite?

1 3/4 c. milk (any kind you like – whole milk will make the pops creamier, low/no-fat milk will make them more icy in texture)
3 T. cocoa powder (whatever you have on hand)
3 T. sugar
Pinch of salt
1 t. vanilla
Mini chocolate chips
Mini marshmallows
In a large saucepan, whisk together the milk, cocoa powder, sugar and salt. Bring to a simmer over medium heat and remove as soon as the cocoa becomes smooth. Stir in the vanilla extract and cool the mixture to room temperature.
Sprinkle a layer of chocolate chips into the bottoms of your popsicle molds. Fill molds halfway with the hot cocoa mixture and place a layer of marshmallows on top (making sure that each marshmallow touches the hot cocoa). Freeze for an hour and insert your sticks. Freeze till solid. Add another layer of chocolate chips, hot cocoa and marshmallows. Freeze till solid.
To release the pops, hold molds briefly under hot water.

These, as many of the others, made my mouth water. So guess I should ask for some popsicle molds for Christmas? Because I feel like I’m missing out on so much fun here. And no, I couldn’t pick a favorite until I tried more than some of them.
