cocktail meets pop with these citrus mojito pops!
I suppose no popsicle series would be complete without a boozy pop, am I right?
I’m not much of a cocktail drinker (a good Bee’s Knees notwithstanding), but I DO enjoy a mojito – especially in the summer. And it seemed the perfect drink to turn into a pop!
In looking at various recipes I came across this mixed-citrus version, which looked so pretty and refreshing that I knew I had to try it.
Delish.
You can adjust the sweetener up or down, as well as play with the mix of citrus fruits.
Want a “faux-jito”? Simply omit the rum.

1 1/4 c. fresh squeezed orange juice (from 2 oranges)
2 T. each fresh lemon and lime juice
3 T. sweetener of choice (I used honey)
3/4 c. water
2 T. rum (optional)
handful fresh mint leaves
lime slices
Place all ingredients except the lime slices into a blender – blend till smooth. Place a lime slice into each of your popsicle molds. Pour mixture into each mold, leaving a bit of room at the tops to allow for expansion.
Freeze till slushy, about an hour – add sticks and freeze till solid.
To release the pops, hold molds briefly under hot water.
