pop! goes my summer: basil lime & cucumber pops

I’m calling these “spa-sicles”:

These pops are so utterly cool and refreshing, it’s like a visit to the spa. For your mouth. Seriously, it is so hot and humid here right now that I plan on keeping a stash of these in my freezer all summer long.

Even the pale green color is so soothing, don’t you think? And this recipe “slave” loves how flexible you can get with the ingredients – from how much sweetener you add to the amount of cucumber you use.

Basil, Lime and Cucumber Pops
from A Cozy Kitchen

2 c. water
2 stalks basil (stems AND leaves)
1/4 c. sugar (or to taste)
3 limes
1 cucumber, peeled and seeded

Combine water, basil and sugar in a saucepan and bring to a boil. Stir till the sugar is dissolved and remove from the heat. Cool to room temperature and then cover and refrigerate overnight.

Grate the cucumber (I used the large hole side of a box grater); juice the limes. Discard the basil from the syrup and stir in the lime juice.

Pour mixture three quarters of the way into your popsicle molds – freeze for 30-45 minutes or till slushy. Add grated cucumber, using a thin knife to distribute. Add sticks and freeze overnight.

To release the pops, hold molds briefly under hot water.
