favor-“ette”: an apple do-ahead tip

So are you elbow-deep in apples yet?

I thought so.

I mean, it IS October. And if my Facebook and Instagram feeds are any indication, you have all been apple picking.

Me too.

And, like me, you’ve probably been making endless batches of apple sauce, muffins, pies, quick breads and more.

Life with a pre-schooler means that my days are broken up into little chunks – a few hours here, a few hours there – so getting a jump on meal prep can be challenging.

If you remember my Mealtime Bootcamp series, one of my favorite strategies is to become a “master of efficiency” – that is, tackling several small tasks throughout the day. Peeling and chopping apples definitely falls into that category, but can be a challenge as they start browning almost immediately.

So here’s what you do:

Place your peeled and chopped apples immediately into a bowl of cold water. Turn a few times to make sure they’re all covered, and stick in the fridge till you’re ready to use. They’ll come out unblemished and crisp, even hours later.

This tips works beautifully on potatoes too – and with Thanksgiving AND Hannukah falling on the same day this year, you’ll appreciate this do-ahead in the months to come.

    Bravo. Since it’s the air that causes the browning, submerge in water. Avocadoes in orange juice, same thing.
