I know – salad. Big deal, right? But having just come home from a trip to Florida (where grapefruits are in season year round), I’m itching to make my very favorite salad.
I’ll admit, I’m not the most creative when it comes to putting a salad together – I’m never sure what ingredients go together and you KNOW how uncomfortable I am working without a recipe.
So when I found this recipe for this winter salad composed of crisp romaine, bitter arugula, sweet grapefruit sections and slivers of parmesan, I knew I’d struck gold.
This is the kind of refreshing side that can make the long winter days to come just a little more bearable – kind of like sunshine on a plate, don’t you think?

1 small garlic clove, minced and mashed to a paste with ¼ t. salt
3 T. grapefruit juice
3 T. white wine vinegar
1 ½ t. Dijon
½ c. olive oil
1/3 c. minced parsley
4 c. romaine hearts, cut into bite-sized pieces
1 1/2 c. baby arugula
1 c. thinly sliced fennel
1/2 c. thinly sliced radishes
2 grapefruits, cut into sections
parmesan curls, for garnish
Make the dressing: whisk garlic paste, grapefruit juice, vinegar and mustard. Add oil in stream, whisking until emulsified. Whisk in parsley and salt and pepper to taste.
Make the salad: In a large bowl toss together romaine, arugula, fennel, radishes and dressing. Add parmesan and grapefruit sections and toss gently.
