just a pinch: salt

So this is my last “just a pinch” post – did you enjoy the series? I hope so; I really enjoyed sharing it. It has definitely heightened my awareness of, and appreciation for, the difference that using the highest quality of seemingly mundane ingredients can make in my cooking. And baking.

And popcorn.

Yes, this last post is a popcorn recipe. I know, I was skeptical too, when Gwenn showed me her Pure Mountain Truffle Salt (!!!!) and told me that she was going to serve it up on some popcorn (????).

O.M.G., you guys.

It was delicious, and made a normally ho-hum snack literally transcendent. I pretended to listen to the rest of Gwenn’s presentation as I zombie-like grabbed large handfuls of the stuff in a manner typically reserved for a dark movie theater* (I don’t THINK I licked my fingers. God, I hope I didn’t lick my fingers. Gwenn?).

Can you tell that I am ALL OVER this salt? I’m thinking about trying it on everything – including my scrambled eggs, and maybe even some roasted baby potatoes (right?).

And did you know that sea salt was chock full of health benefits? Unlike table salt, which is highly refined and processed (thereby losing most of its beneficial nutrients), sea salt contains over 80 important minerals, such as calcium, potassium, iron and zinc. Table salt, on the other hand, often contains things like aluminum and bleaching agents (blech).

Popcorn with Truffle Salt

½ c. popcorn kernels
Pure Mountain Truffle Salt
Pure Mountain Olive Oil

Place kernels in a paper lunch bag; fold the top over a few times. Place the bag in your microwave and cook for 1-3 minutes, or till there are only a few seconds between pops.

Empty the popped corn into a large bowl, drizzle with some olive oil and sprinkle with a little salt (you’ll need less than you think so start slow). Toss to distribute ingredients and serve immediately.
