Today’s post is short and sweet – just like the recipe.
Just a few ingredients, and ready in less than 10 minutes. A delicious mix of sweet and savory, and a perfectly pretty accompaniment to any grilled protein.

Peach, Basil and Red Onion Salad
adapted from Martha Stewart Living
3 peaches, sliced 1/2″ thick
1/4 red onion, thinly sliced
1/3 c. fresh basil leaves, cut in a “chiffonade” (I used this gorgeous purple basil but any variety will do)
Juice of 1/2 lemon
1 T. extra-virgin olive oil
coarse salt and pepper
Gently toss all ingredients in a serving bowl. Season generously with salt and pepper.

Sheri, this looks like a perfect summer salad! I’ve never tried peaches in combination with onions, but I have the feeling I would like it. A LOT! Your recipes always make me hungry! Thanks for the inspiration!

I made this salad last night and served it with grilled halibut and roasted veggies. It was divine. Loved it so much I had leftovers for lunch today and tossed in some sliced turkey. Thanks for a great summer recipe.
